Thai Peanut Chop Salad

What You’ll Need:

For the salad:

1  head lettuce or greens of choice

½ small purple cabbage, shredded

1 sweet bell pepper, any color, chopped

2 cups shelled edamame, thawed 

For the dressing:

½ cup unsweetened peanut butter powder 

¼ c Tamari or soy sauce

1 Tbsp sesame oil

1 Tbsp chili crunch  (less if you don’t like the heat)

1 Tbsp pure maple syrup

1 tsp ginger powder 

For serving:  about 1 cup Peanut Butter Crunch Best Ever Granola or roasted peanuts 

1/2 c dry roasted, unsalted peanuts

Chop salad ingredients and divide evenly into (4) containers for grab and go lunches throughout the week.

Prepare dressing by combining ingredients into a jar.  Add water to desired consistency.

Toss with dressing and sprinkle with Best Ever Granola just before serving.

Serves 4.
