Roasted Beet & Almond Salad with Goat Cheese

Roasted Beets with Best Ever Granola’s Classic Salted Roasted Almonds

Wait, roasted beets + almonds? Yasssss! Please trust us here.

What you’ll need:
🔸1 bunch fresh beets (or a package of roasted beets from the produce department)

🔸1 head or clamshell lettuce of choice

🔸1 (4oz) log soft goat cheese or chevre

For serving:
🔸drizzle Olive & Marlowe 25 Star Traditional Balsamic

🔸1/2 c or so Best Ever Granola Roasted Almonds of choice

What you’ll do:

🔸If roasting beets, preheat oven to 400*.

🔸Remove beets from greens, rub with olive oil & sea salt.

🔸Place whole beets in a roasting pan lined with parchment paper or a silicone mat & cook for about 45 minutes, or until a fork slides out smoothly. Just like baking a potato! (You can do this up to 5 days ahead of time to have on a hand for a quick meal.)

🔸Divide salad greens among two plates.
Slice cooked, cooled beets and add to salads.

🔸Drizzle with balsamic and almonds just before serving.
