Roasted Beet + Strawberry Sumac Goat Cheese Salad

What you'll need:
-4 whole beets (or a package of roasted beets from the produce department)
-1 head or clamshell lettuce of choice
-1 (4oz) log soft goat cheese or chevre
-1/2 c or so Strawberry Sumac Best Ever Granola
For serving:
drizzle Olive & Marlowe 25 Star Traditional Balsamic

What you'll do:
If roasting beets, preheat oven to 400*.
Remove beets from greens, rub with olive oil & sea salt.
Place whole beets in a roasting pan lined with parchment paper or a silicone mat & cook for about 45 minutes, or until a fork slides out smoothly. Just like baking a potato! (You can do this up to 5 days ahead of time to have on a hand for a quick meal.)
While beets roast, roll goat cheese into 6 balls. Roll in Strawberry Sumac Best Ever Granola.
Divide salad greens among two plates.
Slice cooked beets and add to salads.
Drizzle with balsamic an sprinkle with more granola just before serving.
